Smoky Crab Dip

Perhaps when you think "holiday" you don't think "crab". Well, think again! You always need a few easy munchies to keep the masses happy while you're putting the finishing touches on your grand feast spectacular. This Smoky Crab Dip will not only keep them happy, it will have them scrapping every last vestige outta that bowl.

There are two key factors that make this dip so sublime. The first is using real, sweet lump crab meat (skip that imitation stuff!). The second is the smoky heat so graciously bestowed by the smoked paprika and cayenne.

SMOKY CRAB DIP

PREP TIME: 5 minutes
COOK TIME: 20 to 25 minutes
RECOMMENDED PELLETS: Any
SERVES: 6

INGREDIENTS

1/3 cup Mayonnaise
3 ounces Cream Cheese, softened
1/4 cup Sour Cream
1 teaspoon Smoked paprika
1/4 teaspoon Cayenne Pepper
1 1/2 cups Lump Crab Meat or do half lump crab and half claw meat
3 Scallions, thinly sliced
1/4 teaspoon Salt
Freshly cracked Black Pepper, to taste
Butter Crackers, for serving
Chopped Scallions, for garnish

PREPARATION

Start the Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Preheat to 350 degrees F with the lid closed for 10 to 15 minutes.

Meanwhile, in a large bowl gently stir together all of the ingredients except the crackers, garnish scallions and the crab meat until thoroughly combined. Gently fold in the crab meat, being careful not to break it up too much.

Season to taste and transfer to an oven-safe serving dish.
